Broken Wheat Upma

Be innovative! Reach out for the wheat dalia instead of semolina when you prepare breakfast tomorrow. Wheat has abundant protein, calcium, fiber and other nutrients necessary for a vigorous and healthy life. You can even make the broken wheat upma eye-catching and healthy for kids by adding their favourite vegetables like carrots and green peas. Clean and wash ¼ cup of dalia and blanch it in 2 cups of hot water for 4 minutes. Drain and keep aside. Add 2 tablespoons of oil in a pressure cooker , add cumin seeds, and when they start to clutter, add some curry leaves and a pich of asafoedita for a nice flavor, now add one finely chopped onion and green chilli to it. Saute the onion till it turns translucent. Now add the peas, carrots and broken wheat (dalia) and sauté for 3 to 4 minutes. Add 1/1/2 cups of water and pressure cook for 1 whistle.

Finally, garnish it with fresh coriander and serve hot.

Potato and Cauliflower Rice

Clean, wash and soak the rice for approx. 15 minutes. Drain and keep aside. Heat 2 tablespoons of oil in a pressure cooker and add cumin seeds , bayleaves and cinnamon and fry till they turn light brown. Now add ½ tsp of turmeric powder, ¼ tsp dry ginger powder, ½ tsp chilli powder, 1 cup potatoes and cauliflower and sauté for around 2 minutes. Add 2 cups of rice and sauté for 2 more minutes. Add 4 cups of hot water and salt and pressure cook for 1 whistles. Allow the steam to escape before opening the lid. Serve hot garnished with mint or coriander sprigs.

Healthy mix-vegetable sandwich

In a bowl, cut 2 medium sized tomatoes, 1 medium sized onion, 2 capsicums, and 1 cucumber.
To this, add salt to taste, ½ tsp of black pepper powder, 1 tsp of mustard powder, 2tsp tomato ketchup, ¼ tsp chilli sauce, 2 tsp thick curd and mix well. Toast the bread slices on both sides on a griddle, slightly buttered. Arrange the mixture between 2 toasted bread slices. Serve hot.

Tomato and Cucumber Sandwich.

All you need is 4 whole wheat bread, 24 cucumber slices, 24 tomato slices.
For the Green Mint and Coriander Sauce you require, 1 cup chopped mint leaves, ½ cup chopped coriander, ¼ cup sliced onions, ¼ cup tomatoes, 2 green chillies, salt to taste.

Combine all the ingredients and grind to a smooth paste.
Toast the whole wheat bread slices on a griddle or a toaster till golden brown in colour from both the sides. Apply 1 tbsp of green chutney evenly on each bread slice. Top it with 6 cucumber slices and 6 tomato slices on each bread slice. Sprinkle little salt and pepper on top.
